The beautiful country of Tolima surprises us again with an excellent coffee from the municipality of Gaitania, near the town of Planadas.
This coffee has undergone a drying process with anaerobic fermentation for 24 hours. In the cup we find a great complexity, when the coffee is hot it presents notes of pear, acidity reminiscent of cranberry and a lot of sweetness that transitions to a cup with lots of yellow fruits and grapes when the coffee lowers the temperature.
As an espresso it has many balanced fruity notes and a pronounced acidity, but it is round in the mouth and very sweet, delicious for espresso tonic or cortado.
